A smaller version of Fusilli, this works well with delicate or cream-based sauces, in bakes or in salads.
Ricotta, Pesto and Sun-Dried Tomato Spirali

Cooking Time: 15 - 30 mins
Serves: 5
Method
(1) Cook the pasta according to directions on the packet.
(2) Meanwhile, mix the ricotta with the Parmesan.
(3) Drain the pasta and return it to the pot. Add the cheese mixture and thoroughly blend through.
(4) Stir in the olive oil, pesto and half the sun-dried tomatoes and their oil and mix together. Add salt and pepper to taste.
(5) Serve sprinkled with the remaining sun-dried tomatoes.
